Today's Recipe Card

As promised here is a recipe from my file...
This is a favorite recipe of ours but unfortunately not one that we use often. Unless we get chuck steaks in our Angel food box we don't have it. Maybe I will find some on sale soon and then I can serve it for dinner.
Mattingly's Swiss Steak
several good size chuck steaks (the kind that have been tenderized andalready in package)
1 large green pepper, diced
1 medium onion, diced
2 cans of stewed tomatoes
Dip your steaks in an egg and milk wash and then in flour seasoned withsalt and pepper. Put some oil in a skillet and get hot. Place yoursteaks in for just a minute on each side to get browned. Move steaks toan electric skillet and pour tomatoes over them. Add your diced greenpepper and onion. Set skillet to a low temp and cook steaks for about 45minutes. These will result in a very tender steak.

We serve this with mashed potatoes as my family likes to put the tomato mixture over their potatoes. This is a very yummy dinner for a Sunday.
