Something Sweet from my Kitchen to yours-- Lemon Bars



Here is a special treat from my kitchen to yours....


Lemon Bars from the Mattingly Homestead


2 c AP flour
1/2 c powdered sugar
1 c butter, softened
4 eggs
1 1/2 c sugar
1 t finely shredded lemon peel (set aside)
1/3 c lemon juice
1/4 c AP flour
powdered sugar

Preheat oven to 350. Line a 13 x 9 pan with foil, leave about 1 inch of foil extending over the ends of the pan. In a large bowl stir together the 2 c of flour and 1/2 c of powdered sugar. Add butter and beat with an electric mixer on low to medium speed just until mixture just begins to cling together. Press flour mixture to the bottom of prepared pan. Bake in preheated oven for about 25 minutes or until light brown.

In a medium bowl beat eggs with a whisk. Whisk in granulated sugar and lemon juice until well mixed. Whisk in the 1/4 c flour and the lemon peel. Pour over baked crust.

Bake about 20 minutes more or until edges begin to brown and center is set. Cool in pan on a wire rack. Remove bars from pan, using overlapping foil to lift bars. Place on cutting board. Sift powdered sugar over top of bars. Cut into bars or into dimond shapes. Store, covered, in refrigerator. Makes 30 bars.
